Chicken Soft-Shell Tacos

Ingredients
3/4 cup tap water1 chicken breast, skin and bones removed (frozen)1 pkg Ortega® Taco Seasoning1 med tomato1/5 cups Colby/Jack Cheese, shredded1 can jumbo black olives1 cup lettuce, chopped6 flour tortillas6 tbsp sour cream
Directions
Boil chicken breast in medium saucepan over medium-high height for 30 minutes. Chop into small squares. Mix chopped chicken with taco seasoning mix and water in a frying pan and heat over medium-low heat, stirring frequently until mixture thickens. Chop up tomato and black olives. Put lettuce, tomato, and black olives each in their own bowl and serve.

Makes 6 tacos.

    Overall it's very tasty, but the sodium and fat content is quite a bit higher than I'd ideally like. I'd be interested in whether or not this could made in a more healthy way. - 2/20/09
