Asparagus Brown Rice Oriental Medley

Ingredients
3 tsp vegetable oil3 cups frozen asparagus cuts and tips, thawed and drained3/4 cup chopped onions3/4 cup thinly sliced celery1 1/2 cup thinly sliced mushrooms3 cups brown rice, cooked3 tbsp soy sauce
Directions
Heat oil in large non-stick frypan or wok over medium heat. Add asparagus and rest of vegetables. Cook and stir 2 minutes. Add rice and soy sauce. Continue cooking and stirring 2 minutes or longer until thoroughly heated. Remove from heat and serve immediately.

Substitute 1 1/2 lbs fresh asparagus if desired. Wash and trim, and cut into 1 inch pieces. Cook fresh asparagus in hot oil for 2 minutes then add remaining vegetables as above.
