Oatmeal Pumpkin Pecan Protein Cookies

Ingredients
1 small can pumpkin (1.75 cups)1/2 cup Splenda Brown Sugar Blend2 Eggs1 cup whole wheat flour1/2 cup cake flour1 t. cinnamon1 t. baking soda1/2 t. cloves1/2 t. nutmegdash of salt3 cups oats1/2 cup pecans1/2 cup protein powder6 additional Splenda packets if a sweeter cookie is desired
Directions
Blend together wet ingredients, then gradually add dry ingredients adding oats and pecans last

Bake at 350 for 10 minutes

Makes 44 cookies

    I found that this recipe was easy to make and the cookies tasted good. You should make them sweeter as the recipe suggests if you want your cookies to be sweet. As the recipe is, they are not that sweet. Mine stuck to my cookie sheet even after greasing. I suggest baking them on parchment. - 8/26/15
