Empanada de Guayaba y Queso

Ingredients
1 package of Empanada Discs at room temp.1 egg white lightly beaten1 package of Guava paste (wont be using the whole package though, seeing as I want keep the calorie content low)1 package of Philadelphia Lite Cream Cheese
Directions
Preheat oven to 400 degrees

Spray the "spray butter" on a baking sheet (I use a cookie sheet, and I only put about 4-5 squirts) I've also used Pam but at home we tend to prefer the bit of buttery taste to them.

Lightly brush the edge of the disc with egg white..it'll help to keep it sealed

place a very small slice of guava paste & 1 slice of the cream cheese in the center of the disc. Then fold over (moon shaped)

Crimp the edges with a fork

Place finished empanadas on prepared baking sheet, and squirt a little more spray (if using the butter spray- only squirt 2 more squirts)

Bake, turning occasionally, for 10 minutes or until crisp & golden brown

The Disc package comes with 10 discs per package. There will be more than enough Guava Paste left to make more (taste great w/out the cream cheese too). The nutritional info is based on 1 pastry.
