PB2 Chocolate Chip Cookies (sugar free)

5/8 c PB2 (powdered peanut butter)1/3 c water1/4 c erythritol granular (sugar substitute)1/8 c Splenda granular1/4 c EggBeaters or egg whites1/4 c oat flour*1/4 t baking soda1/8 t salt1/2 t vanilla1/4 c Hershey's sugar-free chocolate chips* I made 1/4 c oat flour by blending quick oats until a fine powder (approx 1/3 c oats to start)
Stir together PB2 and water. Mix in eggs and vanilla. Stir in sugar substitutes (you can use all Splenda if you prefer), soda, salt, and oat flour.
Stir in chocolate chips.
Drop by tablespoonfuls onto parchment lined cookie sheet. Bake 12 minutes at 350 degrees.
I think these taste best after they cool.
