Roasted Edamame Salad

Ingredients
2 cups frozen shelled edamame1/2 cup frozen or fresh corn kernels1/4 cup chopped scallions1 Tbl olive oil1 clove garlic chopped1 cup fresh tomatoes chopped1/4 cup fresh basil leaves chopped1/4 tsp sea salt1/4 tsp fresh black pepper3 Tbl red wine vinegar
Directions
Toss edamame, corn, oil, garlic, scallions, salt and pepper. Spread out onto a metal non stick cookie sheet. Roast in a 400 degree preheated oen for 12-15 mins. Cool completely, about 30 mns. in the refrig.

Toss with vinegar, basil and tomatoes.

Serve chilled or room temp.
