Chocolate Cupcakes

Ingredients
1 cup hot water1/2 cup unsweetened cocoa powder1/2 cup & 2 tbsp splenda1/3 cup unsalted butter2 large eggs1 1/2 cups whole wheat flour1 tsp wheat germ1 tsp baking soda1 tsp baking powder1/2 tsp salt1 tsp pure vanilla extract
Directions
preheat oven to 350. insert paper liners into two 8 cup muffin tins. in bowl, whisk hot water & cocoa slowly until smooth. set aside. cream sugar & butter for 4 to 5 minutes with electric mixer. add eggs, one at a time, beating well. whisk flour, baking soda, baking powder & salt until well blended. add dry ingredients to wet ingredients, alternating with cocoa mixture until well mixed. do not overmix! beat in vanilla. spoon batter into cups filling each about 2/3 full. bake 15 minutes or until done.
