Ingredients
15 Bean Soup package, soaked and drained.1 can diced tomatoes with green chilisapprox 1 cup dhopped carrots1/2 large chopped onion1lb chicken thighs1tbsp olive oil1 tsp tumeric1 tsp chili powder1 tsp garlic powder
Directions
In a big skillet carmelize onions with olive oil. Add Chicken, spices, carrots and cover with water. Bring to a boil, reduce heat and simmer for 1 hr. Remove cooked chicken to debone. In a big pot combine broth and beans. Bring to a boil and again reduce heat and simmer 1/2 hr. Remove 1/2 of bean soup and blend smooth (optional). Combine all ingredients and simmer 1/2 hr more and serve. makes 20 1/2 cup servings. Great with crackers, brown rice or noodles too!

    I used pinto beans, soaked for 8 hours. Then I added shredded chicken at the end rather than cook the thighs in the mixture. It was good,but sure didn't look like the picture. - 4/19/18
