6 eggs--beaten2 cups of shredded low fat cheddar cheese16 oz of ff cream cheese1/4 cup fat free half and half1 1/2 cups chopped zucchini1 1/2 cups chopped mushrooms (fresh)3/4 cup bell pepper3/4 cup chopped onionclove of garlic-minced3 Tbsp oil1 tsp salt1/4 tsp pepper4 slices of low calorie whole wheat bread-diced
saute the zucchini, onion, pepper and garlic in the oil until tender. Let cool quite a bit.
Mix the eggs grated cheese and cream cheese-add the salt and pepper and the sauteed veggies and bread
Spray a 9x13 pan
Bake 350 degrees for an hour until set.
Let cool --best warm.
Can put in fridge and cut into appetizer size pieces and serve cold
