Slow-Cooker Chicken Lasagna

Ingredients
Ground Chicken 1 lbOnions, raw, 1 mediumGarlic, 2 clovesTomato Paste, 1 can (6 oz)Hunts Tomatoes, Crushed, 28 oz caneggplant, 1 lb6 Lasagna Noodles, Mozzarella Cheese, part skim milk, 1.5 cups
Directions
In dutch oven cook chickenuntil no longer pink, 4-6 minutes. Add onion, eggplant and garlic; season with salt & pepper. Cook unti onion has softened, 3-5 mnutes. Stir in tomato paste, then tomatoes; bring to a boil, and remove from heat.

Spoon 2 cups of mixture into bottom of slow cooker. Layer 2 noodles to cover, 2 cups mixture and 1/2 cup of cheese; repeat with 2 more layers.

Cover slow cooker and cook on low 4-6 hours.
