Chicken lemongrass soup

1 tbsp canola oil1 medium onion, minced1 clove garlic, minced1 stalk lemongrass, trimmed, bruised, and cut into 2 - 3 pieces2 tsp curry powder1 inch ginger root, cut into 6 pieces3 lime leaves (dry or fresh)4 cups low sodium chicken broth14 ounce can coconut milk, lite3/4 lb boneless skinless chicken breast, cubed2 cups mushrooms, quartered or slicedJuice of 2 limes2 tbsp fish sauce
Heat up oil in stock pan. Add onion, garlic and cook on medium for 1 minute. Ad lemongrass, curry, ginger and lime. Stir and cook for 3 minutes. Add broth. Bring to a boil, and then reduce heat to medium and continue to cook for 10 more minutes. Add coconut milk, chicken and mushrooms. Cook for 5 minutes or until chicken is cooked through. Stir in lime juice and fish sauce. Remove ginger, lime leaves and lemongrass stalks.

I made this with a Thai spice blend (couldn't find lemongrass) and omitted lime leaves (couldn't find them, either). It was incredible! - 3/17/10

Lime leaves and lemongrass stalks can usually be found at specialty markets (ie if you have an international district or whole foods type store, you can usually at least find the lemongrass - sometimes in a tube). Glad you enjoyed!
