Lighter Pulled Pork Sandwiches

Ingredients
1 15 oz can crushed tomatos1 T brown sugar2 garlic cloves, chopped1 T spicy brown mustard1 lb pork tenderloin, cut into 4 piecessalt and pepper
Directions
In medium saucepan, stir together tomatos, sugar, garlic, mustard, and 1/2 C Water; season with salt and pepper. Sping to a boil, add pork and simmer, covered, until tender, 18-20 minutes.

Remove pork from sauce and cool on plate. Simmer sauce over medium until reduced by half, about 20 minutes.

When cool enough to handle, shred pork with 2 forks and return to sauce. Add 1 t vinegar and stir.

Serve on buns.
