2 cups brown instant rice3 boneless skinless chicken breasts1 cup shredded lowfat cheddar cheese1 cup salsa1 bag frozen corn
Preheat oven to 375 degrees. Spray a glass casserole dish with non fat cooking spray.
Dice chicken into 1 inch cubes
mix 1 cup salsa, 3 cups water, and 1 bag frozen corn and 2 cups instant brown rice in mixing bowl. Put cubed chicken in the bottom of pan, pour mixture on top. Cover with foil and bake for 30 minutes. Remove foil add cheese over the top, leave uncovered and bake 'til cheese melts. Makes 10 servings

Pretty tasty! I seasoned up the chicken with salt, pepper, and assorted spices. I had to cook it for longer about an hour and 15 minutes total, it was still a little soupy on the bottom, but the rice got done. I put some plain Greek yogurt on top and had some sliced avacado on the side. Yum! - 6/2/16
