CHicken Hobo Packets

4 boneless, skinless chicken breasts3/4 tsp salt1/8 fresh ground pepper4 tsp extra virgin olive oil1 zucchini, halved lengthwise and cut into slices1 red bell pepper, seeded and cut into this slices1 cup chunky salsa2 Tbs fresh chopped cilantro
1. Preheat oven to 425 degrees. sprinkle chicken with 1/4 tsp of salt and 1/8 tsp of pepper.
Heat 2 tsp oil in skillet. Add chicken and cook until lightly browned on each side. Transfer chicken to plate.
2. Heat remaining 2 tsp of oil in same skillet. Add zucchini, bell pepper, and salt and pepper; cook until slightly softened, about 3 minutes.
3. Tear off 4 sheets of foil. Place 1 chicken breast in center; top each with 1/2 cup vegetables and 1/4 cup salsa. Fold each piece into a packet, making a tight seal and allowing room for the packets to expand.
4. Transfer packets to a baking sheet. Bake until the chicken is cooked throught. At least 15 minutes.
5. Sprinkle with cilantro to serve.
