Low-fat Blueberry Muffins

  • Number of Servings: 24
Ingredients
1/4c Applesauce, unsweetened1/4c Canola Oil2 Eggs2c Milk, nonfat2T Whole Flax Seed, ground(updated on 2/25/09)1/2c Sugar1/4c Honey1t sea salt2T Baking Powder4c Flour2c Blueberries, frozen
Directions
Mix first ingredients together in large bowl with a whisk.

Preheat oven to 400 degreesand line muffin pans with cupcake liners or spray with cooking spray, set aside.

Now add flour and baking soda, mix until all incorporated. Fold in blueberries.

Divide among 20 muffins( fill emptu ones wiht water)


Bake for 25 - 30 minutes.

Cool alittle and then pull out of tins.

Enjoy!

    made this with splenda for baking and turned out barely sweet at all. Sticking to paper cups but texture pretty good. Made 30 mini muffins with half batch and calculated about 30 cal per muffin. Will use real sugar next time and see what happens. - 12/13/09

    YES...I use that for most things now and works quite well. Hope you enjoy these, they are one of the faves here in our home.

    1T sugar is 1Pt & there are 8T of to a 1/2 c, would reduce entire recipe by 8 but then you divide over entire recipe by 24 & only about 1/3pt about so unless you were goig to be eating 3 or more at a time really would not make a big difference is would seem. I persoanlly stay away from artificial.

    Thank you...my family loves them as well. The only thing I am doing different and I will update the recipe is I am grounding my flax seeds just before adding them. I have since learned you get the best health results and benefit by doing that.
