Extreme Diet Soup

Ingredients
2 Tbs. extra vigin olive oil2 Large white onions, thinly sliced1.5 pounds bonless, skinless chicken breast1 large carrot, shredded1 jalapeno pepper with seeds, minced2 tsp minced fresh thyme or oregano - 1 tsp if dried8 cups fat free chicken broth1 15 oz can black beans, drained6 cups of baby spinach leaves, packed1 15 oz can diced tomatoes7 tbs grated parmesan cheese as garnish
Directions
Heat oil in large stgockpot over medium heat. Add onions, cook 10 minutes, stirring occasionally. Add chicken, cook 5 minutes or until chicken is cooked. Add carrot, garlic, jalapeno and thyme, cook 2 minutes more. Stir in broth, increase heat, and bring to boil. Add beans, tomato and spinach, return to a boil. Cover, remove from heat. Serve topped with parmesan cheese. Makes 7 2-cup servings.

    Substitute a 15 oz. can of crushed tomatoes for the diced. It infuses the soup with a richer tomato flavor which, combined with the spinach & the spices, gives it a Florentine flavor. No significant change to caloric or fat content, but may increase the sodium a bit. - 1/12/14

    Made this soup....loved it. I used kale instead of spinach and I diluted the low sodium chicken broth. Will make again....I ran out. - 12/5/13

    I have high blood pressure, and this sodium content is more than I should eat in a day--please don't call it "healthy"! However, if made with lo-sodium chicken or veggie broth (better yet, make your own from fresh!), it would fall into that category. Looks good, though. May try it with substitutions - 7/24/13

    Wonderful. I didn't need this to lose weight. I just wanted to eat something that I knew was healthy. LOVE it. My children arent veggie eaters and they love this soup. I added chopped sweet potatoes and squash. I only used 1/4 of the jalapeno b/c I wasnt doing the diet. Delicious!! - 3/8/10
