MUSHROOM CHEESE OMLET

Ingredients
6 EGGS5 SLICES OF AMERICAN CHEESE1 TBL. BUTTER1 CUP FRESH SLICED MUSHROOMSSALT AND PEPPER TO TASTE
Directions
PLACE BUTTER IN NON STICK PAN AND MELT ON MED HEAT. MIX ALL 6 EGGS WITH EGG BEATER OR WHISP UNTIL THOROUGHLY MIXED. PLACE SLICED MUSHROOMS IN MELTED BUTTER AND FRY TILL A LITTLE BROWN. REMOVE FROM PAN AND SET ASIDE.

PLACE EGG MIXTURE INTO FRYING PAN (SAME ONE YOU USED FOR THE MUSHROOMS) TURN HEAT DOWN TO MED LOW. SALT AND PEPPER EGGS . NOW GENTLY LIFT THE SIDES OF THE EGGS WITH A RUBBER SPATULA.ALL THE WAY AROUND THE EGGS .MAKING SURE THAT THE RUNNY EGG MIXTURE IS FLOWING INTO THE PAN WHERE YOU ARE LIFTING THE EGGS.DO THIS UNTILL MOST OF THE RUNNY MIXTURE IS GONE. THEN ADD MUSHROOMS AND THREE SLICES OF AMERICAN CHEESE, VERY CAREFULLY LIFT ONE SIDE OF THE EGG OVER INTO THE OMLET SHAPE. ADD THE OTHER TWO PIECES OF AMERICAN CHEESE ONTO THE TOP OF THE OMLET.PLACE A COVER OVER THE OMLET AND TURN HEAT OFF OR REMOVE PAN FROM THE STOVE.LET SIT FOR 2 MINUTES. CUT IN HALF AND ENJOY YOUR WARM CHEESE OMLET WITH SOMEONE YOU LOVE
