cookiesall-purpose flour, 1.75 cup Salt, .25 tsp Butter, salted, .75 cupCocoa, dry powder, unsweetened, .5 cup Granulated Sugar, 1 cup Egg, fresh, 1 large fillingPowdered Sugar, 1 cup, unsiftedpeppermint extract, .75 tspPeppermint candies, .5 cup (crushed)Butter, salted, .75 cup red food coloring
cookies
Cream together butter and sugar. Mix in the egg. Add dry ingredients and mix together well. Chill for one hour. Scoop out into tablespoon size balls and place on lined cookie sheet about two inches apart. Flatten with a glass and bake at 350 for about eight minutes. Cool on wire rack.
Filling
Mix together all ingredients except mints and blend well. Spread filling on one cookie and top with another. Roll edges in crushed mints.
