Baked Oatmeal

Ingredients
2 cups old fashioned oatmeal, dry1 tsp cinnamon1 tsp nutmeg1/4 cup sugar (can use more or less, to taste)1 1/2 tsp baking powder1 banana, mashed1 cup unsweetened apple sauce1 cup light vanilla soymilk1.5 tsp vanilla extractNice items to add, but not included in nutritional calculations:1 apple, chopped1 handful raisins6 tsp ground flax1/4 cup dried fruit
Directions
Mash banana. Combine wet ingredients. Combine dry ingredients. Add wet and dry ingredients and mix. Place in lined muffin tins, and bake at 350 for 30 minutes. Makes 12.
