Red's Manhattan Style Clam Chowder

Ingredients
2 large potatoes, peeled and cubed2 large onions, chopped2 cloves of garlic, chopped2 large carrots, diced2 large celery stalks, chopped1 green pepper, chopped28 oz can diced tomatoes6 cups water1/4 tsp thyme1 small bay leafcouple sprigs fresh parsley choppedfreshly ground pepperpepper flakes (optional) to taste2 cans cooked clams, chopped or minced, drained (save liquid)A bit of butter, about 2 tbspoyster crackers or saltines
Directions
In large nonstick saucepan over high heat, saute onions, carrot, celery and green peppers in butter then add clam juice until tender. Add tomatoes, water and seasoning to soup mixture. Simmer for 20 minutes. Add clams and simmer for another 25 minutes. Be careful not to let this boil. It will be thick. Serve piping hot with oyster crackers or saltines.
