2 Tbs extra virgin olive oil2 large white onions very thinly sliced1 1/2 LBS boneless skinless chicken or turkey breast (diced)1 large carrot, finely shredded2 large garlic cloved minced1 jalapeno pepper with seeds minced2 tsp minced fresh thyme (or 1 tsp dried)8 cups fat free natural chicken stock1 can black beans (15oz)1 box frozen chopped spinach1 can of roasted tomatosslat & pepper to tasteParmesan cheese to taste
heat oil in large stockpot over medium heat. Add Onion stirring occasionally, for about 10 minutes, add chicken cook until chicken is cooked through and onions are lightly browned. Add carrot, garlic, jalapeno and thyme: cook another 2 minutes. Stir in broth and increase heat to high, bring to a boil. Add beans, spianch and tomato. Bring back to boil then turn off the heat. Add salt and pepper to taste. Sprinkle each serving with 1 tbs of parmesan cheese. (makes 7 servings)
