Pumpkin Chocolate Chip Cookies

Ingredients
1 Cup LIbby's Canned Pumpkin3/4 Cup Sugar1/4 Cup Canola Oil1/4 Cup Applesauce1 Egg2 Cups Flour2 tps. Baking Powder1 tsp. Cinnamon2 tsp. Pumpkin Pie Spice1/2 tsp. Salt1 tsp. Baking Soda1 tsp. Milk (Lactose Free in my case)1 1/2 Cups Semi Sweet Chocolate Chips1 tsp. Vanilla
Directions
In a small bowl, dissolve baking soda in milk; set aside. In large bowl, add pumpkin, sugar, oil, applesauce, and egg; stir. Add flour, baking powder, cinnamon, pumpkin pie spice, salt, and baking soda mixture. Mix well. Stir in vanilla and chocolate chips. Spoon onto cookie sheet. Bake at 375 for 10 minutes. Makes 30 2 Tbsp. cookies

    Very tasty and easy to make. I've never dissolved baking soda in milk before. Used regular and mini chocolate chips. Everyone loves them. Made closer to 40 cookies. - 10/23/09
