San Fransisco Pok Chops

Ingredients
1 tsp olive oil4 lean pork chops (about 3 oz each) trimmedFor the Sauce:1/4 c. dry sherry2 Tbsp firmly packed brown sugar2 Tbsp reduced sodium soy sauce1/4 tsp. red pepper--more of less to taste2 tsp cornstarch2 Tbsp water
Directions
1. To prepare sauce, combine sherry, brown sugar, soy sauce and red pepper. Stir and set aside.

2. In a large skillet, heat oil over medium high heat. Add chops and cook until browned about 2 minutes a side.

3. Pour sauce over chops. Reduce heat to low. Cover and simmer until cooked through about 10 minutes. Add water, if needed, to keep sauce from cooking down too much.

4. Remove chops and keep warm. In a small bowl combine water and cornstarch. Add to sauce in skillet. Cook over medium heat until thickened--about 2 minutes. Pour sauce over chops and served.

This makes 4 servings--1 chop and 1/4 sauce for each person.

I suggest that you serve this over whole wheat, yolkless egg noodles and tender asparagus. Garnish with green or red pepper.
