Pesto Feta Pasta

2 Servings of Ronzoni Smart Taste rotini pasta (or a whole wheat pasta)2 oz. reduced fat feta2 roma tomatoes, chopped1 c. fresh spinach1. tbsp olive oil1/2 cup basil pesto2 tbsp. purple onion
1. Use a smidge of the olive oil to cook your pasta.
2. Once the pasta is cooked, drain, reserving a couple of tablespoons of water.
3. Heat the rest of the olive oil and cook the onion.
4. Add spinach and lightly sautee.
4. Add the pasta, tomatoes and basil pesto, stirring to coat. If the pasta looks dry, add some of that reserved pasta water.
5. Remove from heat and add the feta.
Makes 3 servings.
