Chocolate Zucchini Cake

Ingredients
1.5 cups flour1 tsp salt1 tsp baking soda.5 cups baking cocoa1.25 cups brown sugar2 eggs (or egg substitute).5 cups vegetable oil2 tsp vanilla extract2 cups grated zuchinni
Directions
Mix flour, salt, cocoa and baking soda in small mixing bowl. In large bowl, mix sugar, eggs, oil and vanilla extract. Add dry ingredients to wet ingredients and mix until smooth. Fold in zuchinni. Bake in 350 oven for 20-25 minutes, or until tootpick comes out clean.

    Fantastic!! I made a few changes....used applesauce instead of oil, 1/2 cup mashed banana, 1/4 cup chocolate chips, and 1 tbl more cocoa. I used a regular cake pan!! It was great...my hubby who hates cake loved it!! - 8/14/07
