Nana's Rice Pudding

Ingredients
1 cup long-grain white rice1/2 cup granulated sugar1/2-1 cup plumped raisins1 egg, beaten1.5 cup milk/evaporated milk/coconut milk (nutritional info uses half 1% and half coconut milk)1 tsp vanillaLOTS of cinnamon to taste
Directions
Bring two cups of salted water to a boil. Add rice, stir, cover and let simmer over medium-low heat for 15 minutes without removing the lid. There will still be water when 15 minutes is up.
Remove from heat and add sugar and plumped raisins.
Meanwhile, in a separate small bowl, beat and egg and add your milk and vanilla. Add to rice mixture. Return rice to stove and return to boil over medium-low heat stirring occasionally. Add lots of cinnamon.
Can be served either hot or cold.
