Cobb Salad

Ingredients
~3 medium slices bacon, cooked~2 boneless, skinless chicken breasts, cubed~0.5 red onion, chopped~2 Roma tomatoes, chopped~1 avacado, chopped or sliced~1 hard-boiled egg, chopped~4 cups lettuce~0.5 cup crumbled blue cheese~0.25 cup olive oil~2/3 cup sherry vinegar~1 shallot, diced~1tsp Dijon mustard~salt and pepper to taste
Directions
Dice bacon and cube chicken. Chop onion, tomato, avacado, and egg. Top lettuce with the meat, veggies, egg, and cheese. Whisk together olive oil, sherry vinegar, shallot, mustard, salt, and pepper. Toss all together and serve.
