-2 sweet potatoes-1 onion-4 heads bok choy-1 package firm tofu-1 red pepper-a dozen mushrooms-1/3 cup mung bean sprouts-1/3 cup shredded carrots-1/4 cup soy milk-4 tbsp Tamari-1/4 cup soy sauce-3 tbsp brown sugar-lemon juice to taste-cumin to taste-cayenne to taste-corriander to taste-2 tbsp. green curry paste-1 tsp. tomato paste-2 tbsp. wostechier sauce-1/4 cup yogurt-4 tbsp. oil-tbsp. garlic
parboil and chop sweet potatoes
chop veggies & tofu
stir-fry garlic, potatoes, veggies, and tofu.
add soy sauce, lemon, soy milk and seasonings all while stirring
when all the veggies are cooked to taste, remove from heat and stir in yogurt.
serve over brown rice
