Cherie's Applesauce Bran Muffins

1 cup wheat bran1 1/2 whole grain wheat flour2 tbsp ground flax meal1 tsp baking powder1 tsp baking soda5 packets of splenda2/3 cup raisins2/3 cup chopped walnuts1 cup non fat milk1/2 cup molasses3/4 cup unsweetened applesauce2 tbsp olive oil1/3 cup water
Yields 20 moist muffins. Bake for 15 minutes at 400 degrees. Preheat oven.
In a large mixing bowl, combine all dry ingredients, then mix in walnuts and raisins.
In a separate bowl, stir in applesauce, milk, molasses, oil and water. Add to dry ingredients and stir just until moistened and mixed well.
Spoon into greased muffin tins or paper muffin cups. Bake 15 to 20 minutes.
Honey may be substituted for molasses. Any nuts may be used instead of walnuts. This recipe does not use eggs as the ground flax seed meal and water are used instead of eggs.
