Thick and Creamy Garlic Herb Buttermilk Dressing

Ingredients
2 tablespoons buttermilk powder1/4 cup instant nonfat dry milk2 teaspons dried Italian Seasoning1/2 teaspoon salt1/2 teaspoon xanthan gum2 tablespoons white wine vinegar1 clove garlic, crushed or mincedDash of ground red pepper2 tablespoons plain lowfat yogurt, drained*1/2 cup water
Directions
*Drain a container of yogurt by placing in cheesecloth or a tea towel and setting in a strainer over a bowl. Place in refrigerator for several hours or overnight. Resulting yogurt will be the consistency of sour cream, and can be used just like sour cream!

Mix dry ingredients in a small bowl. Add water, vinegar and yogurt. Blend with an immersion blender until thick and creamy. Refrigerate for 1 hour for flavors to blend. Serving size is 2 Tablespoons.
