Microwave Ritz Cracker Chicken

Ingredients
8 boneless, skinless chicken thighs2 large eggs, beaten2 tbls. margarine1 sleeve reduced fat Ritz Crackers
Directions
Skin and debone 8 chicken thighs. Melt margarine in microwave. Crush 1 sleeve of Ritz crackers in a plastic bag. Beat 2 eggs; add margarine. Coat each thigh in egg mixture followed by crushed Ritz crackers. Spray a baking dish; place chicken in, cover with wax paper. Place in microwave and cook on high for 15-20 minutes (depending on your microwave).
You could also bake this recipe for 25-30 minutes or until done.
Makes 8 servings.

    Great recipe and very easy to make. I'm a college student with very little space to work in and only a toaster oven but this was something simple. next time I will know to add some sort of seasoning to the ritz mix though because there wasn't a ton of flavor in mine. - 10/14/11
