Chicken & Sausage Jambalaya

1 lb smoked turkey ring sausage, cut into ½ inch slices½ cup chopped green onions28 oz canned tomatoes¼ tsp pepper1 ½ cups water1 lb ground turkey1 lb boneless, skinless chicken breasts1 medium bell pepper, chopped5 cloves minced garlic½ tsp salt1 cup uncooked rice
Boil chicken until done. When cooled, chop and set aside. Brown sausage, drain and set aside. Brown together the ground beef, bell pepper, green onions, and garlic. Cook until beef is browned. Add to the ground beef the tomatoes, salt, pepper, sausage, and chicken. Cover and simmer 20 minutes. Add in rice and water and cook an additional 25 minutes or until rice is tender.
Makes 8 1-cup servings.
