Sweet Potato Minestrone with Turkey Sausage

1 teaspoon olive oil1.25 pound sliced turkey sausage1 large onion1 rib chopped celery4 cups low-sodium turkey broth3 medium, peeled, diced sweet potato1.5 cup sliced zucchini1.5 cup sliced summer squash2 - 15 ounce cans great northern beans2 teaspoon dried oregano1/4 teaspoon salt1/2 teaspoon black pepper6 ounce baby fresh spinach
1. Heat the olive oil in a soup pot over medium heat. Add the sausage slices and cook until lightly browned. Add the onion and celery. Cook until soft, about 5 minutes.
2. Add turkey broth, sweet potatoes, zucchini, summer squash , beans, oregano, salt and pepper. Bring to a boil then reduce heat and simmer, partially covered, for 30 minutes.
3. Stir in spinach and cook until the leaves wilt, about 2 minutes.
Make Ahead:
Prepare the soup without the spinach a day or two in advance. Add the spinach leaves just before serving.
Makes approximately 10 - 1 cup servings
