Jenni's Veggie Lasagna

Ingredients
Cooking Spray1 C. Sliced Mushrooms48 Oz. Marinara Sauce6 oz. Lowfat Ricotta 3 C. Raw Spinach, steamed, drained and pureed.1/4 C. Egg Beaters8 Oz. Lasagna Noodles8 Oz. Lowfat Mozzarella
Directions
Steam, drain and puree spinach. Set aside.
Preheat oven to 350 degrees.
Spray a 9 x 13 pan with cooking spray.
Saute mushrooms in a spritz of cooking spray until they release juices.
Add marina sauce to mushrooms.
In a separate bowl, combine ricotta, egg beaters and herbs, salt and pepper.
Layer in baking dish in this order: sauce, uncooked noodles, ricotta, noodles, sauce. Cover and bake for 45 minutes.
Uncover and sprinkle with the mozzarella. Baked uncovered for 15 minutes.
