Salsa Meatloaf (Crock Pot)

Ingredients
2 lbs. ground beef, your choice of leanness1 egg, beaten2 cups tomato salsa, mild or medium1/2 cup quick oats1 tsp. oregano1 tsp. salt1 tsp. black pepper3 tsp. minced red onion
Directions
Mix beef, 1.5 cups salsa (save rest for serving), egg, and oats gently in large bowl using hands or fork (be sure to not compact the meat). Add remaining ingredients and blend well.

Create two "cradle strips" using aluminum foil for your slow cooker: I take a large piece of foil (about 2 feet long) and cut it in half lengthwise. I then fold these strips the long way four times, making strong strips of foil. Lay these along the bottom of the cooker in a cross shape. Place the well-rounded meatloaf atop this cradle, and make sure that the lid closes over these strips.

Cook for about 6 hours on low (unitl your thermometer reads a safe beef temp, I go for 165-170). Top with salsa before serving.

Makes 8-4 oz. slices.

    We loved this one. So easy and the best part was it was ready when we all got home. The only thing we did different was add roasted anahiem chilies to the meat mixture as well as covering the top of the meatloaf. - 10/3/09

    I tried this. It was great! The only thing I did different, was to cook it in the oven, used buffelo and Mrs. Dash's southwest Chipolte in it. - 8/10/09
