Tomato Parmesan

Ingredients
9 1/4 inch slices of firm medium sized tomato1/4 cup flour seaoned with salt and pepper1/4 cup egg substitute1/4 cup bread crumbs1/2 tsp each dried basil, thyme and oregano1/4 cup grated fresh parmesan cheese4 oz shredded mozzarella cheesecooking spray
Directions
mix together dried herbs, parmesan cheese and
bread crumbs in a pie plate, set aside

coat tomato slices with seasoned flour

shake off excess flour

dip each slice into egg substitute

coat tomato with bread crumb mixture

place each on a baking sheet sprayed with nonstick spray

when all tomatoes are breaded, quickly spray tops

sprinkle mozzarella cheese evenly over all tomatoes

baked in a 350 degree over for 15 minutes or until golden brown

serve immediately

makes 4 servings (3 slices each)
