Red Lentil Soup with Lemon

Ingredients
3 tbsp olive oil1 large onion, chopped2 garlic cloves, minced1 tbsp tomato paste1 tsp cumin1/4 tsp kosher salt1/4 tsp black pepper1/4 tsp cayenne pepper4 cups vegetable stock2 cups water1 cup red lentils6 medium baby carrots, sliced2 tbsp lemon juice
Directions
Saute onion, garlic and carrot in olive oil.
Stir in tomato paste, cumin, salt, pepper and cayenne
Saute for an additional 2 minutes
Add broth, water and lentils.
Bring to boil than reduce heat to simmer in partially covered pot on medium low for 30 - 45 minutes.
Puree half of soup in blender and return to pot.
Stir in lemon.
Serve
