Veggie Curry

Ingredients

1 tsp olive oil1 small onion, chopped2 cloves garlic1/2 head cauliflower, chopped into florets1 bunch broccoli, chopped into florets, discard stems1 brick tofu5 tbsp curry powder (add less or more to taste)2 can lite coconut milk
In a small stock pot or large sauce pan, saute onion and garlic in olive oil until onion is semi-translucent.
Add brocolli and cauliflower florets.
Add tofu.
Add coconut milk and curry. Stir well.
Let simmer for 15-20 minutes to allow veggies and tofu to absorb curry flavor.
Serve over rice or lentils.
