Tomato Soup

Ingredients
2 cans petite diced tomatoes (14.5 oz.)1 can chicken stock (14.5 oz. )1/4 cup finely chopped onion2 tbsp butter ( using a substitute will change calorie and nutrition info) 2 tbsp. whole wheat flour
Directions
melt butter in a large saucepan over low heat
add onions and sweat them until they turn clear
add whole wheat flour
mix well and then slowly add chicken stock
mix well and then add tomatoes
bring to a simmer and stir occasionally about 20 minutes until thick and bubbly
use an immersion blender to puree the soup until smooth and creamy if desired, some people like it chunky though.
I like to garnish mine with snipped chives or scallions, basil is good also but not included in nutrition info
The serving size I listed is for 6 bowls(2 ladles full ) of soup. Makes more servings if you serve a cup of soup with sandwich.
