Chili ala Brucker

Ingredients
2 tbsp olive oil3 cloves garlic2 cups fresh mushrooms, chopped1 cup onion, chopped1 bulb fennel, chopped1/2 cup fresh oregano, chopped1 sweet potato, sliced1 green zucchini, sliced1 yellow summer squash, sliced32 oz can dark red kidney beans32 oz can black beans16 oz can lima beans2 32 oz cans crushed tomatoes16 oz can diced tomatoes with green chilies16 oz bag frozen sweet corn kernels1 pack McCormick 30% less sodium chili seasoning mix
Directions
Peel & thinly slice sweet potato and microwave sliced on a plate for 8 minutes to soften. In heavy stock pot, saute garlic, mushrooms, oregano, onions, and fennel in olive oil over medium heat. After 15 minutes, add sweet potato and remaining ingredients. Cook over medium-low heat for 30 minutes, stirring frequently.
