Curry Spinach Linguini Pasta w/Chicken

2 chicken breast cubed1 cup Vegetable Booth1 sm. can Tomato Juice (5.5 oz)1 cup frozen vegetables (Nature's Balance by Europes Best)2 Tbsp Curry Paste (hot) by Patak's4 tsp Fresh Garlic1 Tbsp Cider Vinegar1 Tbsp Oregano1 Tbsp Basil24 oz Spinach Linguine or other Pasta1 Tbsp Olive Oil
1. Cut chicken into cubes approx. 1/2 " square.
2. Heat a 10' frying pan and once hot add olive oil, chicken and curry paste. Cook on medium heat until chicken starts to turn whitish - continue to stir.
3. Add frozen vegetables, vegetable broth , tomato juice, basil, oregano, cider vinegar and garlic.
4. Cook for 10 minutes then remove chicken and vegetables from sauce.
5. Cook sauce another 10 minutes to reduce liquid.
6. Add chicken and vegetables to reheat.
7. In a separate pot bring water to a boil adding salt and cook pasta to desired tenderness.
