Cucumber and Tomato Salad

1 lb firm ripe tomatoes1/2 cucumber1 onion1/4 c grapeseed oil or olive oil6 Tablespoon nonfat yogurt2 Tablespoon chopped fresh parsley or 1 Tablespoon dried1/2 teaspoon plain white vinegarsalt and pepper to tastechives, to garnish
Seed and chop tomatoes. Chop the cucumber and onion into small pieces. Combine all the dressing ingredients and season to taste. Pour over the salad and toss together. Spinkle the pepper and salt and garnish with chives. Can be serve with crusty bread.
