Spaghetti with Tomato, Basil & Mozzarella

Ingredients
3/4 lb spaghetti1 1/2 lb tomatoes seeded and cut into 1/2-inch dice (about 3)1/2 lb fresh mozzarella cut into 1/4-inch dice3/4 cup chopped fresh basil, plus whole leaves for garnish6 tbsp olive oil2 tsp red wine vinegar1 clove garlic minced1tsp salt1/2 tsp fresh ground black pepper3 tbsp parmesan cheese
Directions
In a pot of boiling salted water, cooks spaghetti until done, about 12 minutes.

Combine tomatoes, cheese, basil, oil, vinegar, garlic, salt & pepper in a large bowl.

Drain pasta toss with tomato & cheese mixture. The heat of the spaghetti will soften cheese slightly.

Sprinkle with parm. cheese and basil leaves
