454g Westsoy fat reduced firm tofu1 large egg1 TBS. extra virgin olive oil1/2 small onion, diced6 large mushrooms, diced10 oz.fresh spinach, chopped2 TBS. Parmesan cheese, grated3 oz.Cabot 50%reduced fat jalapeno cheese, diced1/2 tsp. black pepper1/2 tsp. oregano, dried1/8 tsp. basil, dried2-3sprays of PAM for pie dish
Makes 4 servings.
Preheat oven to 350 degrees.
Mash tofu in large bowl. Add slightly beaten egg.
Set aside.
Heat oil and saute onions and mushrooms.
Steam spinach and add to tofu mixture with
sauted veggies.
Mix in both cheeses and the spices.
Spray pie dish, put in oven and set timer for 45 minutes. Enjoy piping hot.
