Stuffed peppers with 93/07 ground beef

Balls:Ground beef 93/07 fat- 2 lbsRice (I use Uncle Bens white rice)- 1 cupEgg- 1salt, pepper, 2 tsp each (more or less for taste)Sauce:Tomato soup-2 cansMilk, fat free-3 cupsBasil, oregano, 2 tbsp each, more or less to tasteSalt, Pepper, 2 tsp each, more or less to taste
Balls: 120 calories per 3 oz ball
Sauce: 78 calories per cup
BALLS:
Mix beef, rice, egg, salt and pepper (more or less to taste)
Form into 14 3-oz balls
SAUCE:
Mix 2 cans tomato soup and 3 cups milk together.
Add spices (more or less to taste) and heat for about 5 min. on med. high.
Add balls to sauce and continue cooking on low to medium for about 45 minutes or until fully cooked. Stir frequently. can cook longer and it won't over cook.
Taste the sauce and add more spices if needed after it has cooked for awhile. Usually pepper does the trick.
Serve over extra rice
