Curried Lentils with Spinach

Ingredients
1 tbsp olive oil1 onion1 tbsp curry powder1 tbsp ground cumin1 tbsp ground coriander1 tbsp curry 1 can lentils1 can tomatoes4 cloves garlic1 pkg frozen spinach
Directions
- saute onion in olive oil
- add spices
- add tomatoes and lentil, bring to a boil
- add spinach, reduce heat, cook on low for 15 minutes
Makes 6 cups
