Feta-Tomato Stuffed Chicken Breast

Ingredients
1 pack of boneless, skinless chicken breasts.1 can diced, petite tomatoes (with oregano, basil, and garlic)1 cup crumbled, feta cheese
Directions
Wash chicken.
Mix can of diced tomatoes and feta cheese in a side bowl.
Butterfly (slice in half without cutting all the way through,) chicken breasts.
Stuff chicken breasts with tomato-feta mixture; use toothpicks to hold together if necessary; and place in a lightly sprayed pan. Pour remaining tomato-feta mixture over top of chicken breasts.
Bake at 400 degrees for approximately 55 minutes; oven times may vary.
Depending on number of chicken breasts in pack will determine servings.

    I used fresh tomatoes instead of canned. I used seasonings listed and feta cheese. I found it tasty but sort of dry and I don't think the canned tomatoes would have made a huge difference. It may just have been the cook. :) - 4/11/16
