Hot and Sour Soup

Ingredients
3 cups low-sodium vegetable broth1 cup water1 tsp. Sriracha (chili-garlic sauce)2 Tbsp. rice vinegar, unseasoned2 Tbsp. lite soy sauce3 cloves garlic, minced1 Tbsp. fresh ginger, grated2 cups Seapoint Farms Vegetable Blend with Edamame1 Tbsp. sesame oil3 green onions, chopped1 cup firm Tofu, cubedsalt substitute and black pepper, to taste
Directions
1- In a 4-qt. crockpot, add in the broth, water, Sriracha, rice vinegar, soy sauce, garlic, ginger and vegetables.

2- Cook on low for 5-7 hours.

3- Add in the tofu, and continue cooking for an hour.

3- Add in the sesame oil and green onions, and allow to combine and warm through. Serve.

Makes 4 servings.

    I was most impressed with this soup, as was my husband.

    I didn't have any vegetable broth on hand so I used chicken broth and had to re-compute the calorie count.

    The flavors were wonderful and became even better overnight.
