low fat bran muffins

Ingredients
1 cup all purpose flour2 cups all bran cereal1/2 cup unsweetened applesauce2 egg whites1 1/2 tsp baking powder1/2 tsp bakingm soda1/2 tsp cinnamon1/4 cup frozen unsweetened blueberries1 1/4 cups fat free milk
Directions
add milk to all bran and let it sit for 5 minutes.
combine flours and spices.
mix applesauce and egg whites--add to the milk and cereal mixture. mix in flour and spices
add blueberries.

spray muffin tins with non-fat cooking spray.
divide mixture to make 12 muffins.
cook for 18-20 minutes @400 degrees

    These are very easy to make and I love the idea of using All Bran Cereal! The apple sauce and blueberries add just enough sweetness without all the added calories! Even my kids loved them (my daughter loves blueberries). I will definitely be keeping this recipe and passing it along to my friends. :) - 5/6/10
