Rotel Southwest chicken skillet

1 Tbsp pure vegetable oil4 boneless, skinless chicken breasts cut into 1 inch chunks (about 12 oz.)1 cup uncooked long grain rice1 (10oz) can Rotel diced tomatoes with green chilies1 (80z) can tomato sauce1 cup water1 cup shredded cheddar cheese 2 green onions thinly sliced (optional)sour cream optional(sour cream and onion not considered in nurtition facts)
This is a recipe from ConAgra foods (Rotel). I got it our of a magazine.
Heat oil in a large skillet over medium heat. Add chicken and cook for 5 minutes, stirring frequently, until chicken is no longer pink.
Stir in rice, tomatoes, sauce, and water. Bring to a boil. Cover and reduce heat to low. Cook about 20 minutes until rice is tender.
Stir chicken and rice. Top with cheese and green onion. Cover and cook 5 minutes more or until cheese melts.
Serves 4 (1-3 oz chicken breast, 1/4 c. rice with cheese and sauce each)

This was so yummy!! My roommate and I both loved it. She doesn't eat spicy food so I used regular Rotel but when I make it just for me I'll definitely use spicy Rotel because it could use a kick. I loved the carb count and I served it with a salad. Will definitely be making it again! - 4/30/12
